Rubia Gallega is widely considered one of Spain’s most respected cattle breeds.
Originating from Galicia, these cows are raised slowly over many years.
Unlike industrial beef, which prioritizes speed,
Rubia Gallega develops flavour through time and natural feeding.
Therefore, the fat becomes golden from grass consumption,
while the flavour evolves into a deep, nutty, and complex profile.
At SOPA, we choose the tenderloin cut.
Although it is the most delicate part, it requires the highest level of precision.
For this reason, cooking is kept minimal to preserve its purity.
Carabineros — Sweetness from the Depth
Meanwhile, Carabineros represents the ocean.
This deep-sea red prawn is sourced from the Atlantic coast of Spain.
Because it lives in cold, high-pressure environments,
its texture becomes firm and its flavour intensely sweet.
In Spain, chefs rarely overcook Carabineros.
Instead, they allow the natural qualities to remain untouched.
Consequently, the ingredient speaks for itself.

Thai Royal Project Caviar — Balance and Elevation
To complete the dish, we introduce Thai Royal Project caviar.
Unlike traditional European caviar,
this version is cultivated in the cool mountain waters of Northern Thailand.
As a result, the pearls are clean, refined, and balanced.
They do not dominate the dish.
Instead, they enhance both the meat and the seafood.
Therefore, the caviar acts as a bridge,
connecting the richness of the beef with the sweetness of the ocean.
