A Journey Through Spain · One Region at a Time
Spain is not one cuisine.
It is a collection of regional cultures shaped by the Atlantic Ocean, the Mediterranean Sea, mountains, islands, farmland and centuries of local traditions.
Therefore, the 17 Regions of Spain Tasting Experience at SÓPA explores Spain one region at a time.
Every month, we select one of Spain’s 17 autonomous communities and create an entirely new 9-Course Regional Tasting Menu inspired by that destination.
Rather than repeating the same tasting menu throughout the year, each month begins a new chapter.
Our guests may experience the Atlantic seafood traditions of Galicia, the mountains and Cantabrian coast of Asturias, the culinary identity of the Basque Country, Mediterranean influences from Catalonia and Valencia, or the distinctive flavours of Andalucía.
Each region tells its own story.
And each story becomes a new menu at SÓPA.

The 17 Regions of Spain experience is designed for guests looking for something beyond a conventional tasting menu.
Our private dining format is suitable for special celebrations, family gatherings, dinners with friends, business dinners, client entertainment and private occasions.
Every group experiences the same regional journey together across nine courses.
Most importantly, the journey does not end after one visit.
Return the following month and Spain changes again.
