A restaurant does not begin when its doors open.
For Chef Yha at SÓPA Bangkok, the day starts hours before dinner service. From morning planning to ingredient selection, preparation, tasting and the final briefing, every step contributes to the experience guests eventually see at the table.
Her morning begins at 5:00 AM with a simple routine: wake up, exercise, breakfast and coffee. By 9:00 AM, attention shifts toward the restaurant—checking reservations, reviewing the menu and planning the kitchen’s work.
Later in the morning, ingredients become the focus.
At SÓPA, Spanish gastronomy is explored through carefully selected products and regional inspiration. Ingredients may include Carabineros, Jamón Ibérico, Ibérico pork, premium seafood and Rubia Gallega beef.
However, sourcing an exceptional ingredient is only the beginning.
Understanding temperature, texture, seasoning and timing is equally important. Therefore, tasting and adjustment remain part of the kitchen’s daily routine.
By the afternoon, preparation becomes more intensive. Sauces and stocks are checked, seafood and meat are prepared, and each station gets ready for service.
Then, at 5:00 PM, SÓPA comes alive.
The restaurant presents an intimate approach to Spanish dining in Bangkok, with limited seating designed to allow close attention to each reservation.
